Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #18106
30-60 minutes
ingredients
1/4 pound yellow onions, finely chopped
3/4 pound hash browns
2 pounds ground chicken breast
1 egg white
1/4 ounce chopped parsley
salt and pepper, to taste
seasoning to taste
6 eggs
hamburger buns
condiments as desired
directions
Cook hash browns and onion in skillet until cooked. Let cool. Stir to break up.
Combine ground chicken, egg white, hash brown mixture, parsley, salt and pepper, and any desired seasonings in a bowl. Mix well.
Form mixture into patties and cook in skillet until done (chicken needs to be cooked through).
Meanwhile, fry the eggs in another skillet until desired doneness (keep in mind the "runny" factor when it comes to eating the burger!).
When the chicken patties are done, place them on hamburger buns with desired condiments and toppings and top with a fried egg.
