Thai-Style Grilled Pork Chops

ingredients
4 pork chops, about 1-1/4-inches thick, well trimmed
1 teaspoon grated lemon peel
4 cloves garlic, crushed
1/4 cup grated ginger root
1 tablespoon chili powder
1/2 teaspoon ground coriander
1/2 teaspoon black pepper
1/2 teaspoon crushed red chiles
3 tablespoons water
directions
Place all ingredients except pork chops in blender container, blend until smooth and spread about 2 tsp of paste on each chop, covering both sides. Cover chops and refrigerate for 2 to 24 hours.
Prepare medium-hot. Grill chops directly over coals just to 150 degrees F internal, about 7 to 8 minutes per side. Cover and rest for 5 minutes.
