It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

4 boneless center cut pork chops, 3/4-inch thick
1 can (8 ounce size) crushed pineapple with juice
1/3 cup packed light brown sugar
1 tablespoon soy sauce
Preheat oven to 350 degrees F. Coat a baking pan with a spray of canola oil.
Rinse pork chops under cold running water. Pat dry with paper towels. Place pork chops in a baking pan.
In a small bowl, mix together pineapple, brown sugar and soy sauce. Spread pineapple mixture evenly over the top of pork chops. Cover tightly and bake for 50 minutes or until well done.
Place baking pan on cooling rack. Let stand for 5 minutes before serving.

This is a very simple recipe and fills the belly, but there is not much "WOW" factor to it. It is one of those dishes that the sides are what are going to carry the meal.

This recipe was great but I did make two changes. I did not include the soy sauce because I hate it. I cooked it for 0 minutes and it didn't seem like it was 10 minutes away from being done so I changed the temp to 375. I added drained pineapple and brown sugar to the top of each one and cooked it 20 more minutes. The taste of it was great. It tasted similar to brown ham you have for thanksgiving but it had the texture of pork chops. The best of both. :) I would recommend keeping an eye on how done it is and making the decision for yourself on changing temperature or cooking times. We will definitely be making this again.
