ingredients

3 cups broiled mahi mahi
1/4 cup almonds or macadamia nuts, chopped
1/4 cup pineapple, crushed
1/4 cup mayonnaise
1/4 teaspoon curry powder
1 egg, beaten

directions

Shred mahi mahi with fingers. Combine fish, nuts, pineapple, mayonnaise, curry and egg. Mix well.

Form into patties. Fry or broil.

    This recipe is GREAT!!!!! Very simple to make. You can taste every ingredient in the mahi burgers and all the flavors are perfectly balanced. Grilling your hamburger buns with butter and garlic, then topping with a garlic aioli doesn't hurt either. ;o) Here's a little word of advice. In order to keep the patty from falling apart in your saute pan, squeeze your mahi patty over a bowl. Keep the juice for now. pan fry the first side of the burger, flip it, then pour the juice back onto the patty. This way the patty stays together when cooking, but you don't wind up with a dry fish burger.
