6 tablespoons unsalted butter, at room temperature
2 teaspoons Chianti or other red wine
1 teaspoon kosher salt

Using a spatula, mix softened butter in a mixing bowl until it's spreadable. Add wine and salt and mix until thoroughly combined.

cook's notes
This is wonderful over grilled steaks.

Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.
Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I love flavored butters on grilled meat so I tried this. I think next time I'll use salted butter and omit the additional salt.
