ingredients
1/2 cup unsalted butter
1 1/2 tablespoon minced seeded canned chipotle chilies
2 teaspoons fresh lime juice
1/4 teaspoon salt
lime wedges
directions
Melt butter in small saucepan over medium heat. Add minced chipotles, fresh lime juice, and salt.
Reduce heat to low and cook chipotle butter 1 minute to blend flavors. Serve with lime wedges when using.

This turned out to be a simple, delicious, and very versatile condiment! I made the original recipe, chilled it into a log, and used it to top charcoal-grilled steaks, where it added wonderful, smoky heat. The next day, it added great flavor to a frittata, when I used it to saute some onions, ham and leftover potatoes from the steak dinner the night before. Then the NEXT day it came in handy to make some very tasty garlic toast! All I added was a little rosemary and garlic powder. Can't wait to use this again!
