This chicken gets the royal treatment. Melty cheddar along with bacon, garlic, and onion gives it a downright heavenly topping.
6 slices bacon
1 tablespoon butter
5 boneless, skinless chicken breast halves
1/2 cup finely chopped onion
2 teaspoons finely chopped fresh garlic
1/8 teaspoon freshly ground pepper
1/2 cup chopped parsley
1/2 cup Cheddar cheese, shredded
Heat oven to 350 degrees F. Cook bacon in a 12-inch skillet over medium-high heat, turning occasionally, until crisp (4-6 minutes). Crumble bacon and set aside.
Add butter to same skillet. Place chicken breast halves in skillet. Cook over medium-high heat, turning once, until chicken is no longer pink (6-10 minutes). Remove from skillet and place in an ungreased 11- x 7-inch baking dish.
Place onion and garlic in same skillet. Cook over medium-high heat until onion is softened (1-2 minutes). Stir in bacon.
Spoon onion mixture over chicken breasts and sprinkle with pepper. Top with parsley and cheese. Bake for 10-15 minutes or until cheese is melted.
