Copycat Capo's Chicken Diablo

ingredients

2 teaspoons oil
OR
2 tablespoons butter
1 cup sliced mushrooms
8 ounces cream cheese, softened
1 teaspoon dried thyme
1 teaspoon garlic salt
1 teaspoon dried oregano
4 boneless chicken breasts, pounded flat
1/4 cup dark brown sugar
1/4 cup chopped pecans
1/4 cup Dijon mustard
1/3 cup chopped fresh parsley

directions

Preheat oven to 350 degrees F.

In a small skillet, add the oil (or butter). Saute mushrooms until softened and set aside to cool. In a bowl, combine cream cheese, thyme, garlic salt (or, garlic powder or Garlic Magic) and oregano. Add mushrooms and stir to combine. Pound out each chicken breast until flat. Spread with equal parts of the filling and place seam-side down in a baking pan. In another bowl, mix the sugar, pecans, mustard and parsley. Spread mixture on top of the chicken. Bake for 25 to 30 minutes.

    So great! The flavors are amazing. I never had the dish, but my husband raved about it for years. I was glad to recreate it for him. His one feedback - he remembers the dish being prepared wholly in a skillet, no oven. Next time I’ll use a toothpick to secure the chicken breasts, then brown and cook in a skillet, and toss in some of the topping at the last minute. Served with fettuccini alfredo, of course.

    I lived in Virginia Highlands in the mid 80s and this was my favorite dish at Capo's. Now I live in southern California and can make it in my own kitchen. I put toasted pecans in the filling, also. Now if I can find a clone of Jagger's Pizza!

    This was absolutely wonderful. This is so good. It is savory and sweet. chicken recipes all become very boring versions of the same thing. That is not the case here. It was delicious, different, and pretty easy. I plan to make this often.

    Thank You for posting this recipe; my husband and I used to eat this dish at Capo's when we were dating and we have talked often about how we regret that the restaurant is closed & we can't get this fabulous dish. Now we'll try it at home!

    This recipe is wonderful. I use a bit of nutmeg rather than garlic and oregano in the filing because I think it goes better with the topping. A great company recipe that can be made early in the day and popped into the oven. Great with a pasta side.
