4 boneless skinless chicken breast halves
2 tablespoons olive or vegetable oil
1 medium cucumber, seeded and chopped
1/2 cup plain low-fat yogurt
2 tablespoons reduced-fat mayonnaise
1 tablespoon minced fresh dill
1/8 teaspoon black pepper
Brush both sides of chicken with oil. Broil 5 inches from the heat or grill over medium coals, turning occasionally, for 10-14 minutes or until juices run clear.
Meanwhile, combine remaining ingredients in a small bowl. Spoon over warm chicken; serve immediately. Or, to serve cold, spoon sauce over chicken and refrigerate several hours or overnight.

For a healthy recipe, this was great! I did add a little salt and a large dollop of lite caesar dressing to it. It is wonderful with the unseasoned chicken. I used 4 chicken tenderloins, which is really only enough chicken for 2 people so I had leftovers. The recipe would also be great as-is in a wrap of some kind.

This recipe was delicious and so easy! I just grilled the chicken breats on a George Foreman grill and it took no time at all. I will be making this again very soon!
