Crispy Chicken Tacos Recipe

Serves/Makes: 4 tacos
Ingredients:
1 whole boneless skinless chicken breast -- julienned
1/4 onion -- julienned
1 serrano chile -- stemmed and minced
1 tomato -- chopped
1/2 cup beer
salt -- to taste
1 cup mushroom salsa -- see recipe
4 taco shells -- freshly fried
Directions:
Preheat oven to 350 degrees. Place the chicken in a baking dish and top it with the onion, serrano, tomato, and beer. Sprinkle with salt to taste and cover with foil. Bake for 8-10 minutes, or until cooked through. Transfer the chicken mixture to a bowl, add the salsa and mix well. Divide the mixture among the taco shells.
