1 1/2 pound boneless, skinless chicken breast halves, chopped
1 tablespoon oil
1 box taco dinner (tortillas, seasoning and taco sauce)
1/2 cup sour cream
1 package (8 ounce size) shredded Cheddar cheese, divided

directions

Cook and stir chicken pieces in oil in large skillet until cooked through; drain. Add seasoning mix and 3/4 cup water. Bring to boil. Reduce heat; simmer 10 minutes, stirring occasionally. Stir in sour cream.

Spray 12x8 baking dish with nonstick cooking spray. Line baking dish with 5 of the tortillas; sprinkle with 1 cup of the cheese. Spoon chicken mixture over cheese; top with remaining tortillas. Drizzle with taco sauce. Bake at 350 degrees F for 30 minutes. Sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese is melted.

    Great recipe to put together for busy nights. I usually have all these ingredients on hand so all I have to do is stick it in the oven and we're good to go. My whole family likes it and I make this every couple of weeks.

    So easy and tasty. I am sure you could add tons of things to it. I have made this several times and always a hit. I made exactly as listed except for the number of tortillas. I only use 6 because I buy the larger ones. (3 on botton and 3 on top).

    This is an easy dish to prepare and is really tasty! I don't care for taco sauce/salsa so I left half of my dish plain and the other half with sauce for my hubby. He raved about yummy it tasted and I found my part equally as yummy. We will definitely be making this again!!!
