Zucchini Burgers

ingredients
1 cup zucchini, shredded
1/2 cup cheddar cheese, diced
2 eggs, beaten
1 small onion, chopped
1/2 cup crackers, bread crumbs or croutons, crushed
1/3 cup wheat germ
1 tablespoon margarine
directions
Mix together all ingredients.
Drop by tablespoonfuls on non-stick skillet in which margarine has been melted. Brown each side about 8 minutes on medium heat.

Trying to avoid fried foods, I tried baking and they turned out great! Just use a little pam or olive oil on the pan. I also added s&p, and corriander(my favorite) Also added garlic another time. If you like mexican taste add cumin. Experiment with spices and herbs!
