A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.

1 pound ground turkey breast
1/2 cup bread crumbs
1 package (10 ounce size) frozen chopped spinach, thawed and drained
1/3 cup chopped onion
6 tablespoons dijon mustard, divided
1/4 teaspoon salt
1/4 cup sliced roasted red peppers
4 ounces part-skim mozzarella cheese, cut into 1 ounce slices
In a large bowl, thoroughly combine turkey, bread crumbs, spinach, onion, 4 tablespoons mustard, and salt. Shape mixture into individual patties. Chill 30 minutes.
Grill burgers over medium heat for 8-10 minutes on each side, or until cooked through.
Top each burger with 1-1/2 teaspoon mustard, 1 tablespoon red peppers and 1 slice of cheese. Cover grill; cook until cheese is melted. Serve on rolls if desired.

Tasty! Don't use the super lean turkey though or it falls apart. Chilling helps but you still need some fat in there to keep the shape

We're giving these a 5-star rating even though we thought there was a little too much breadcrumb in the mixture. Overall though, they were FANTASTIC! The spinach mixed in was great! and the topping of the mustard, red pepper and mozzarella was just divine. Serve on buns or for a low carb diet use low carb tortillas!
