Fancy meets easy in this cauliflower casserole, and the result will have you coming back for seconds.

2 cups cauliflower
3/4 cup ham, chopped
1/2 cup Cheese Whiz
2 tablespoons milk
1/3 cup Bisquick baking mix
1 tablespoon butter
1 tablespoon Cheddar cheese, shredded
1/4 teaspoon nutmeg
Put cauliflower in baking dish; sprinkle with ham.
Mix cheese whiz and milk until smooth; pour over ham.
Mix remaining ingredients until crumbly; sprinkle over cheese mixture. Bake at 400 degrees F for 20-25 minutes, or until golden brown.

I used frozen cauliflower in this so I didn't need to precook it as suggested. Super delicious recipe! Kinda addicting too with the topping on it. My picky kids adored it and I'll be making it again soon.

I wish I had followed the suggestion of steaming the cauliflower first as it wasn't done enough to my liking. It was softer but too firm. My kids didn't want to eat it (they liked the cheesy mixture though). My husband and I liked it and didn't mind the firm cauliflower but it wasn't what I expected it to be.

If you heat the cheez whiz a little first it is easier to mix with the milk. I didn't think the cauliflower would cook enough in the amount of time listed so I steamed it partially first. The topping on this is outstanding! Good, simple recipe that my family enjoyed. Thank you!
