Quick And Easy Chicken And Peaches

ingredients
2 teaspoons sesame oil
4 skinless, boneless chicken breasts, sliced crosswise into thick medallions
3 ripe peaches, peeled and sliced
4 green onions, chopped, green part included
1 teaspoon minced fresh ginger
garlic powder, to taste
salt and pepper, to taste
directions
Peel peaches with a potato peeler and slice over a bowl to catch juice. Cut onions into bite-size pieces and mince ginger. Add ginger and onion to the peaches and stir.
Heat oil in a large nonstick skillet on medium heat. Sprinkle chicken with salt, pepper and garlic powder. Saute in oil for 2 minutes on each side, turning with tongs, until lightly browned.
Add peach mixture. Stir to combine. Cover, reduce heat and cook gently for 10 minutes or until chicken is no longer pink inside.

This recipe was "ok" - it wasn't bad, it just didn't have any special qualities to it. We would have liked the peaches better they had more of a kick to them. Perhaps adding chopped red onion for extra "bite" - to make it more of a salsa-like mixture (and some minced jalapeno?). The flavors just weren't distinct enough after heating the peaches with the chicken. We would make it again, however, with modifications.
