Keeping a can of frozen orange juice concentrate in the freezer means you can make more than just orange juice. Try it in a variety of orange-flavored recipes.


1/4 cup all-purpose flour
salt and pepper, to taste
2 boneless, skinless chicken breast halves
1 tablespoon olive oil
1/4 cup apricot jam
1/2 cup canned apricots in light syrup or juice
1 tablespoon reduced sodium soy sauce
1 tablespoon water
1/8 teaspoon ground ginger powder
1 pinch black pepper
Combine the flour, salt, and pepper in a zip-top plastic bag and mix well. Add the chicken and shake to coat the chicken in the seasoned salt. Remove the chicken from the bag and shake off any excess. Set the chicken aside.
Heat the olive oil in a skillet over medium heat. Add the chicken and cook, turning once, for 10 minutes or until cooked through.
Meanwhile, combine the apricot jam, canned apricots, soy sauce, water, ginger, and black pepper in a saucepan over low heat. Let simmer until the chicken is cooked through.
Serve the chicken breast halves on individual plates, drizzled with the apricot sauce.
