ingredients

8 small skinned chicken thighs, fat trimmed
1 1/2 cup chopped scallions or onion
1/2 cup dried, sweetened cranberries
1/2 cup orange juice
1/2 teaspoon minced garlic
2 tablespoons soy sauce
2 tablespoons apricot preserves
1 tablespoon cider vinegar
1 tablespoon grated fresh ginger
1 tablespoon Dijon mustard

directions

Arrange chicken thighs in slow cooker. Sprinkle thighs with scallions (or onions) and cranberries. Mix all other ingredients and pour over chicken.

Cover and cook on low for seven to nine hours.
