Chicken With Ginger And Onions

ingredients
1 skinless, boneless chicken breast
1 tablespoon vegetable or peanut oil
1/2 cup thinly sliced onion rings
1 tablespoon finely minced garlic
2 tablespoons finely shredded fresh ginger root
1 tablespoon soy sauce
1 tablespoon red wine vinegar
1 tablespoon sugar
1/2 cup chopped scallions or green onions
directions
Cut breast meat into small cubes, about 3/4 inch in diameter.
Heat the oil in a skillet. Add onion rings and garlic. Cook, stirring until onions turn golden brown. Add chicken pieces and stir so they do not stick. Cook, stirring until pieces lose raw look.
Blend ginger, soy sauce, vinegar and sugar. Add this to chicken. Cover and cook about 3 minutes. DO NOT OVER COOK. Stir in scallions or green onions. Serve with rice.

I'm getting ready to make this recipe I will be using a helpful tip a previous review mentioned marinating the chicken I'm lime juice our family loves bold flavors and with lime and ginger most likely this recipe won't be a failure!! I'll post the the finished taste test after my judges have eaten ( my son and husband )

made this for my boyfriend last night and he LOVED it...said it was one of the best meals i've ever made for him and proceeded to thank me at least a dozen times. the only thing i did differently was marinade the chicken in some lime juice before cooking. it was great!

i added lime juice to the chicken while cutting. this recipe is a keeper! loved it and doing it again
my daughter who doesn't care to cook for herself asked me for a ginger chicken recipe. I sent her this one and she made it and loved it. Said it was absolutely delicious and easy. she did add more ginger to her taste as she loves ginger but that was the only change she made. Thank you cdkitchen for inspiring my daughter to cook. used olive oil and added ground pepper. served it with green salad topped with some japanese dressing... my husband just loved our dinner! enjoyed it too. thanks! :)
