3/4 cup olive oil
1 cup watercress (leaves only, no stems)
1 shallot, peeled
2 lemons
paprika
black pepper, coarsely ground
directions
Combine oil, watercress and shallot in a blender. Squeeze in juice of lemons and blend.
Pour dressing into a bowl and season to taste.
