2 1/2 teaspoons lime juice
1 jalapeno, seeded and finely minced
6 tablespoons olive oil
1/2 teaspoon coarse salt
1/4 cup chopped fresh cilantro
directions
Combine all the ingredients in a bowl and whisk well until emulsified. Cover the bowl and chill for 1-2 hours. Whisk the salad dressing again before serving.
