Looking for a creamy salad dressing that doesn't feel so heavy? Celery, spinach, scallions, and basil blended with mayo does the trick (and it also keeps the dressing fresh and green).

1 stalk celery with leaves
5 spinach leaves
5 green onions, white and green parts
1 tablespoon dried basil
1/2 cup mayonnaise
Combine the celery, spinach, and green onions in a food processor. Process until well chopped.
Add the basil and mayonnaise. Process the mixture until smooth, scraping down the sides of the work bowl as needed.
Use immediately or store in a covered container in the refrigerator for up to 1 week.
Use on salads, vegetables, fish, or chicken.
