Cherry Sake Salad Dressing

This cherry salad dressing recipe calls for fresh cherries but you can also use canned pitted cherries, just make sure to drain them well.
30-60 minutes
ingredients
3/4 pound fresh red cherries, pitted
1 cup water
1/4 cup sake
1 tablespoon red raspberry vinegar
1 tablespoon lemon juice, freshly squeezed
1 tablespoon granulated sugar
directions
Heat a large saucepan over medium heat.
Add the cherries, water, sake, vinegar, lemon juice and sugar. Stir well. Bring the mixture to a boil. Let boil for 15 minutes or until the liquid is reduced by half.
Place a 1-quart stainless steel bowl over another bowl that is filled with ice water. Add the cherry mixture to the top bowl and let cool until it reaches 40 degrees F.
When cooled, pour the cherry dressing into a food processor and process until smooth.
