Fruit Mixture
3 medium Granny Smith apples, peeled and cored
3/4 cup pineapple preserves
2 tablespoons all-purpose flour
Crumb Topping
2/3 cup flake coconut
1/2 cup quick or old fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/3 cup butter or margarine, melted
1/4 cup whole almonds, chopped
vanilla ice cream (optional)
directions
Preheat oven to 375 degrees F.
Slice the apples into thin rings, then cut the rings into quarters.
Combine the pineapple preserves and flour in a mixing bowl. Add the apples, tossing to coat evenly. Pour the fruit mixture into the bottom of a 9-inch pie plate or similar shallow baking dish.
For crumb topping, combine the coconut, oats, brown sugar and flour in a mixing bowl. Microwave the butter on high for 1 minute and stir in the chopped almonds. Add butter and almond mixture to the coconut topping ingredients and mix well.
Sprinkle the topping evenly over apple mixture. Bake for 30-35 minutes or until apples are tender and topping is golden brown. Cool slightly.
Serve warm with ice cream, if desired.
