Cheesy Beef and Potato Bake

ingredients
1 1/2 pound ground beef
1 medium onion, diced
1 stalk celery, diced
32 ounces tomato sauce
4 ounces sliced mushrooms, drained
1/2 cup water
3/4 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper
3 medium potatoes, thinly sliced
1 cup shredded mozzarella cheese
directions
Cook the ground beef, onion, and celery until beef is no longer pink and onion is soft. Drain well. Stir in tomato sauce, mushrooms, water, salt, sugar and pepper.
Heat until mixture is boiling. Reduce heat to low; cover, simmer for 5-7 minutes.
Layer 1/3 of the beef mixture into a 9x13 baking dish. Top with half of the potato slices. Repeat process ending with beef mixture.
Cover and bake at 375 degrees F for one hour or until potatoes are soft. Top with cheese and return to oven, uncovered, until cheese is melted.

This meal was tasty and filling, but the tomato sauce was a little strong. I plan to make the recipe again, but next time I will substitute chunky-style garden vegetable spaghetti sauce for the tomato sauce. I will also add some garlic salt. If you want to make it even more Italian, you could even add ricotta cheese between the layers, lasagna-style, and substitute ground sausage for the beef.

A tasty homestyle meat and potatoes meal. You could also use shredded potatoes. The sugar helps cut the acidity of the tomato sauce; we felt this was a little light on pepper (so adjust the salt and pepper to taste).
