1 pound lean ground beef or ground turkey
1/2 cup finely chopped onions
1 clove garlic, minced or pressed
1 teaspoon salt
1/2 teaspoon chili powder
2 cups shredded Monterey jack cheese or a Mexican cheese blend
1 cup diced tomatoes
1 cup diced jalapenos or green chiles
4 large flour tortillas

Combine the ground beef, onion, and garlic in a large skillet over medium heat. Cook, stirring frequently, until the beef is cooked. Drain off any excess grease. Stir the salt and chili powder into the beef mixture.

Place 1/2 cup of the beef filling, 1/2 cup cheese, and 1/2 cup diced tomatoes on one half of each tortilla. Sprinkle with jalapenos as desired. Fold over the other half of the tortilla and press gently so it stays folded.
