It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

Easy tacos made with your choice of ground or shredded beef and loaded with your favorite taco fillings

1 pound lean ground beef or shredded beef
1 medium onion, chopped
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
1 can (14.5 ounce size) stewed tomatoes, undrained
6 corn or flour tortillas, heated
1 cup shredded lettuce
1 package (4 ounce size) shredded cheddar cheese
In a skillet over medium-high heat, combine the ground beef and onion. Cook, stirring, until the beef is cooked and the onion is soft. Drain off any excess grease. Add the chili powder, cumin, and garlic salt. If using shredded beef, cook the onion alone then add the beef along with the spices.
Stir the tomatoes into the skillet and cook, uncovered, for 5-7 minutes or until the liquid begins to thicken. Stir the mixture occasionally while cooking.
To serve, spoon the beef taco filling into soft tortillas and serve with lettuce and shredded cheese and any other desired toppings.
