1 whole boneless skinless chicken breast, julienned
1/4 onion, julienned
1 serrano chile, stemmed and minced
1 tomato, chopped
1/2 cup beer
salt, to taste
1 cup salsa
4 taco shells, freshly fried
directions
Preheat oven to 350 degrees F.
Place the chicken in a baking dish and top it with the onion, serrano, tomato, and beer. Sprinkle with salt to taste and cover with foil. Bake for 8-10 minutes, or until cooked through. Transfer the chicken mixture to a bowl, add the salsa and mix well. Divide the mixture among the taco shells.
