ingredients

2 tablespoons olive oil
2 tablespoons red wine vinegar
1 large green bell pepper, cored, seeded, 1-inch dice
1 seedless cucumber, halved lengthwise, cut crosswise into 1/2-inch pieces
1 small sweet onion, peeled, halved and sliced lengthwise in thin strips
3 large tomatoes, cut into 8 wedges
salt and pepper, to taste

Whisk oil and vinegar together in large bowl. Add pepper, cucumber, onion, and tomato to bowl. Season to taste with salt and pepper; toss gently. Let rest 15 minutes before serving.
