1/4 cup extra virgin olive oil
1/2 teaspoon dry mustard
1 tablespoon minced fresh basil
salt and pepper, to taste
Cut the tomato and mozzarella into equal-sized slices. Place them in alternating layers on individual salad plates.
Sprinkle the tomato and cheese with salt, pepper, and basil.
For the dressing, combine the lemon juice, dry mustard, salt, and pepper in a bowl and whisk to combine. While whisking, slowly add the olive oil and mix until emulsified. Stir in the basil.
Lightly drizzle the dressing over the caprese salad and serve immediately.
