ingredients
3 large firm ripe bananas, peeled
1 tablespoon margarine
3 tablespoons brown sugar
1 teaspoon rum extract
1 tablespoon orange juice
1/4 teaspoon ground cinnamon
directions
Slice bananas into 1/2-inch rounds. Over medium heat, melt margarine in a large, heavy skillet. Add brown sugar and stir until sugar has melted. Add rum extract, orange juice and cinnamon.
Stir all ingredients together. Add banana slices, continue to stir and cook for 2-3 minutes, just until tender. Do not overcook.
Serve warm over fat-free vanilla ice cream or yogurt.
