Get the delicious flavor of bananas foster without the flambe! Bananas are slow cooked in a sweet rum sauce and then served over pound cake with a dollop of ice cream.
6 bananas
1/2 cup melted butter
1/3 cup dark corn syrup
1 teaspoon rum
1 lemon, juice and zest
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Peel the bananas and cut into quarters. Place the bananas in the crock pot.
Combine the melted butter, corn syrup, rum, lemon juice and zest, cinnamon, and salt in a bowl and mix well. Pour the sauce evenly over the bananas.
Cover the crock pot and cook on low for 1 hour or until heated through. Serve over pound cake with vanilla ice cream.

I had some bananas that were getting a little ripe so I used them in this. I think you want fresher bananas that will hold their shape better and not get mushy. The flavor was good but the texture kind of turned me off. I will try again with fresher bananas.

While you don't get the flambe part of bananas foster, you do get pretty close flavor. Very rich and good.
