These Vietnamese banana slices are batter-fried for a crispy exterior and finished off in a flaming pan of rum. Is it even necessary to mention they're amazing with a scoop of vanilla ice cream?
3 ripe bananas
5 tablespoons sifted all-purpose flour
3 tablespoons water
3 tablespoons warmed rum
3 teaspoons sugar
oil, for deep-frying
Add oil to a deep skillet to yield 1 1/2-inches, or fill a deep fryer, and heat to 360 degrees F.
Peel the bananas and cut each crosswise into 3 pieces. Whisk together the flour and water. Dip each banana piece into the batter, letting any excess drip off. Add to the oil and cook for 5-8 minutes, turning as needed, until golden brown.
Transfer the fried bananas to a small skillet (not nonstick) or other flameproof dish. Drizzle with the warmed rum and sprinkle with sugar. Carefully ignite the rum and let it burn off. Serve immediately.
