Fiesta Ranch Potatoes With Chili Dip

ingredients
1 package fiesta ranch party dip mix
5 medium baking potatoes, cut lengthwise into eighths
2 tablespoons vegetable oil
Chili Dip
1 pint sour cream
1 can (4 ounce size) diced green chilies, drained
1 package fiesta ranch party dip mix
directions
For Dip: Stir to blend, then chill for at least 1 hour.
For Potatoes: Shake mix and potatoes together in a plastic bag. When potatoes are coated, add oil. Shake and rub to coat.
Bake at 425 degrees F in a single layer on greased baking pan for 40 minutes. Serve with Chili Dip.
