1 1/2 cup flour, plain 1/2 teaspoon soda 1/2 teaspoon salt 1 teaspoon baking powder 2 cups coconut 2/3 cup oleo 1 cup sugar 1/2 cup evaporated milk 1 teaspoon vanilla extract 1/2 cup maraschino cherries, diced and well drained
Set oven at 375 degrees F.
Sift together flour, soda, salt and baking powder. Cream oleo and sugar until well blended. Stir in milk and flour mixture. (Dough will be stiff.) Add vanilla, coconut and cherries.
Drop 2 inches apart by tsp onto greased cookie pan. Bake 12 minutes or until light brown.
NOTE: Using half red cherries and half green cherries makes a great Christmas cookie.
