1 box (18.25 ounce size) pineapple cake mix 3/4 cup oil 2 eggs 1 small pkg. instant coconut cream pudding mix 1 cup flaked coconut 1 teaspoon coconut extract (optional)

Preheat oven to 350 degrees F.
Place first 4 ingredients in large bowl. Mix with electric mixer. Stir in coconut and coconut extract. Shape dough into walnut sized balls. Place 2" apart on sprayed baking sheets.
Bake 15 to 18 minutes.
Cool 3 minutes on baking sheet. Transfer to wire racks to cool completely.
Had to go to three different stores to find the pineapple cake mix but I finally did. Cookies were good but I would only use 1/2 cup oil next time. I'd like to find a way to use cream of coconut in them for flavor instead of the shredded coconut. Will experiment more.
