Easy cake mix cookies that are the perfect sweet treat
1 package (15-18.25 ounce size) white cake mix
1 package (3.5 ounce size) instant pistachio pudding mix
1/2 cup oil
3 tablespoons water
2 eggs
1/2 cup chopped pistachios
1/2 cup flaked coconut
Preheat the oven to 350 degrees F. Grease a baking sheet.
Combine the cake mix, pudding mix, oil, water, and eggs in a bowl. Beat well with a spoon. Stir in the pistachios and coconut until just mixed.
Drop the cookie batter by teaspoonfuls onto the prepared baking sheet. Place in the oven and bake at 350 degrees F for 10 minutes or until lightly browned around the edges.
Remove the baking sheet from the oven and let the cookies cool for 1 minute before transfer to a wire rack to cool completely.
Store the cookies in an airtight container.
Add a teaspoon of vanilla extract for additional flavor.
For a chewier texture, slightly underbake the cookies and let them finish cooking on the baking sheet out of the oven.
For a festive touch, roll the cookie dough balls in colored sugar before baking.
If the batter is too sticky, refrigerate it for 30 minutes to make it easier to handle.
Try drizzling melted chocolate over the cooled cookies for an extra touch.
You can experiment with different pudding mix flavors to create variations of these cookies.
You can substitute pistachios with any other nut like almonds, pecans, or walnuts.
You can add chocolate chips, or any other mix-ins like dried fruit or marshmallows.
Yes, these cookies freeze well. Once cooled, store them in an airtight container or freezer-safe bag for up to 2-3 months.
Store the cookies in an airtight container at room temperature for up to a week.

Delicious soft cookies. The dough was incredibly stiff for the first dozen that I laid out on a cookie sheet. But then I realized I forgot to add the water! I adjusted the amount of water and added it to the remaining dough and the rest flattened out better in the oven and turned out just fine. This produced exactly 36 cookies, just like the recipe says.

A favorite and I don't usually like coconut. Slightly macaroon-like. Very good, very pretty (light green), very easy.
