ingredients
1 1/2 cup butter
2 cups sugar
1 tablespoon grated orange peel
2 teaspoons vanilla extract
1 egg
3 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cup dried cranberries
1 1/2 cup sweetened flaked dried coconut
directions
In a large bowl, with a mixer beat the butter, sugar, peel, and vanilla until smooth. Beat in egg.
In medium bowl, mix flour, powder, salt. Add to butter mixture beat until dough comes together, 5 minutes. Mix in cranberries, coconut.
Shape dough into balls and place on buttered baking sheet. Bake at 350 degrees F for 15 minutes, until edges begin to brown. Cool.

These are excellent made as is. Everyone loves them. The trick is to check them early and be sure not to over bake!

I have made these for the past 3 years and it is important to measure correctly. They are addictingly good when made just right. My kids and grandkids love them, we have all decided it is our favorite cookie of all. I just finished baking them for this year and had to eat 3 of them with milk right out of the oven..

The combination of cranberries, orange zest and coconut is delicious, but the amount of butter may be a misprint. The cookies are excessively rich.If the butter was cut in half they might be a lot better. I made the full recipe so I have added some flour to try and soak up some of the butter, but I haven't finished baking them yet.
