Hawaiian Pineapple Coconut Cookies

ingredients
1/2 cup sugar
1/4 cup brown sugar
1/4 cup margarine
1/4 cup shortening
1 egg
1 teaspoon vanilla extract
1 1/4 cup flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ginger
1 cup coconut
1/2 cup crushed pineapple, drained well
1/2 cup chopped nuts
directions
Cream together sugar, brown sugar, margarine, shortening, egg and vanilla until light and fluffy.
Stir together dry ingredients. Beat into creamed mixture. Stir in coconut, pineapple and nuts.
Drop by teaspoonfuls 2-inches apart on a greased cookie sheet. Bake at 375 degrees F for 8 to 10 minutes. Let stand 30 seconds on sheet after removing from oven, then cool on wire racks.
