Coconut Wheaties Cookies

ingredients
2 cups flour
1/2 cup butter
1/2 cup shortening
1 cup brown sugar
1 cup white sugar
2 eggs, lightly beaten
2 cups Wheaties or cornflakes cereal (crushed by hand but not to a powder)
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup coconut flakes (unsweetened if possible)
1 tablespoon lemon or orange zest
directions
Cream butter and shortening. Add sugars and beat until light and fluffy. Add eggs and mix well. Add baking soda and salt to flour.
Beating on low speed, add flour to above mixture. Then add vanilla. Finally stir in cereal, coconut, and lemon or orange zest.
Drop by spoonfuls on a lightly buttered cookie sheet. Bake in a 350 degrees F oven for 10 to 12 minutes.
