Smokey Salmon Ball

ingredients
1 pound canned salmon
8 ounces cream cheese, softened
1 tablespoon lemon juice
2 teaspoons grated onions
1 teaspoon horseradish
1/4 teaspoon salt
1/4 teaspoon liquid smoke flavoring
1/2 cup chopped pecans
3 tablespoons chopped fresh parsley
directions
Drain and flake the salmon, removing any bones. Combine all but the last two ingredients and chill for 1 1/2 hours. Form into a ball and roll in parsley and nuts. Return to the refrigerator until ready to serve with crackers.

Have been using this recipe for many years. It makes a wonderful Christmas surprise gift for the neighbors. Always requested by family and close friends.Am making tomorrow with beginner cooks to impress their family.
I make it similar to this except I smoke a 1 pound salmon filet on the gas grill. Wrap wet hickory chips in foil & set it on the burner plate under the rack. Place the salmon on the highest rack in the grill Salmon turns out wonderful â no liquid smoke needed

I don't add the pecans in the dip. I roll the rest of the mixture into a ball and then roll the "ball" in chopped pecans. It makes a beautiful presentation at parties.

Used this dish for years with great success. My family and friends do not allow me entranced into their home without bringing my salmon dip/spread. I add a little more liquid smoke and add a little fresh squeezed lemon too. A little garlic too.
Loved this! It's simple, and made a very nice dip for either veggies or bread, or crackers. I used homemade Cajun spice instead of paprika, and skipped the liquid smoke. Easy, tasty, and made the canned salmon that is healthy, edible.
