Sweet And Hot Almonds

ingredients
1 1/2 cup whole almonds, in their skins
1/2 cup sugar
1 teaspoon ground cinnamon
1 teaspoon salt
1/4 teaspoon cayenne pepper
directions
Place a nonstick skillet over high heat for 1 minute. Add the almonds and lower the heat to medium. Stir until the almonds toast lightly. Add the sugar and keep stirring until the sugar melts and browns, about 30 seconds. Be careful; caramelized sugar can give a nasty burn.
Immediately scrape onto a sheet pan, spread into a single layer, and sprinkle with cinnamon, salt, and cayenne pepper. Wait for a few minutes, until the almonds are just cool enough to touch.
Break them into individual almonds. Do not wait too long, or the sugar will harden and it will be difficult to separate them.
