ingredients

1 pound cooked beets
1/3 cup horseradish -- peeled and grated
1 teaspoon sugar
2 teaspoons lemon juice or white vinegar
salt

directions

Add finely grated, peeled horseradish, sugar, and lemon juice or white vinegar. Season to taste with salt and mix. Set aside for 2-3 hours before serving.

If making from scratch, put large beets, along with enough water to cover, in a large pot and bring to a boil over high heat. Reduce heat to medium, cover, and simmer until fork-tender, about 45 minutes.

Remove from heat and set aside to cool enough to handle. Remove and discard skin, then proceed as above.
