The name, vodka, comes from the Russian phrase zhiznennaia voda, or "water of life". It can be made from everything from potatoes to beets. It's considered to be fairly flavorless which makes it a great liquor for mixed drinks.
Beets in Orange-Honey Sauce

ingredients
6 large beets, peeled, cooked tender and sliced in circles
Orange Sauce
1 cup orange juice (or more if needed)
1/4 cup sugar
2 tablespoons cornstarch
salt and pepper, to taste
fresh nutmeg, grated
1/4 cup honey
directions
In a sauce pot, stir together the orange juice, cornstarch, sugar, salt and pepper until well mixed.
On medium heat, stir continuously until mixture starts to thicken. Stir in the sliced beets. Mixture will thin somewhat.
Add honey to taste and fresh grated nutmeg to taste. Stir until well heated and sauce is thick and smooth.
