Chinese Beets

ingredients
3 cans (12-16 ounce size) sliced beets
1 cup sugar
1 cup vinegar
2 tablespoons cornstarch
24 whole cloves
3 tablespoons ketchup
3 tablespoons cooking oil (optional)
1 teaspoon vanilla extract
1 dash salt
1 1/2 cup beet juice, from drained beets
directions
Drain beets, saving beet liquid. Place the beets in a medium saucepan along with the reserved liquid and the rest of the ingredients.
Mix well, then cook over medium heat for 3 minutes or until the mixture thickens. Let it cool, then store in the refrigerator.

I had this dish at a women's luncheon and have made it many times since. It is delicious. A good recipe for those who have never been brave enough to try eating beets.
