Oyster Mushroom Stuffing

1 cup oyster mushrooms, chopped
1 onion, chopped
1/4 cup chicken stock
1 clove garlic, minced
1/2 cup celery, chopped
4 cups dry bread, diced
1 tablespoon sage
1/2 teaspoon thyme
1/2 teaspoon parsley
1/2 cup butter
salt and pepper, to taste
Prepare turkey for stuffing. Melt butter in large fry pan and saute oyster mushrooms, garlic, celery, onion for 5 minutes or until moisture is gone.
Add sage, thyme, parsley and salt and pepper. Stir well. In a large bowl, mix together bread, mushroom mixture and chicken stock. Cool and stuff turkey.
