1 can (20 ounce size) crushed pineapple, undrained
1/4 cup evaporated milk
1 cup packaged cornbread stuffing crumbs
1/2 cup sugar
1/4 cup melted butter or margarine
3 eggs, beaten
Lightly grease the bottom and sides of a 3 1/2-quart crockpot (you may use a baking dish that fits in a larger crockpot). Combine all ingredients; pour into the crockpot.
Cover and cook on high 2 1/2 to 3 hours. Good with baked ham.

The recipe calls for "1 cup packaged cornbread stuffing crumbs", is that 1 cup by volume or 1 cup by weight? 1 cup by volume, appeared to small, so I weighed and added 2 and 2/3 cups by volume of cornbread stuffing crumbs that appeared right before baking in the crock pot. Its baking now, so I will find out in a few hours.
No, it is only 1 cup by volume. Curious how yours turned out using so much extra?

This was good, and since a previous remark was made, I left out the sugar, added a bag of cranberrys (actually the Cranraisions) they sre little bitter ans seet too. I added two onions and man oh man you talk about great. Oh yes and I took some out ans backed it in patties and made them crispy on the outside, This was the hit of 30 different dressings...

this is an interesting side dish. A little too sweet, but very souffle-like and easy. Slowly puffs to fill the crockpot!
