Crab With Spinach And Rice

ingredients
4 cups chicken stock
2 cups dry white rice
1 small yellow onion
2 cloves garlic
1 fresh jalapeno pepper
2 cups frozen or canned spinach
2 pounds crab meat
1 teaspoon salt
1 teaspoon ground black pepper
1 cup grated Mozzarella cheese
directions
Bring the stock to a boil in a medium-sized saucepan. Add the rice. Cover and boil for 5 minutes. Reduce heat to medium-low and cook for 20 minutes or until the rice is tender.
Remove the skin from the onion and garlic. Cut the onion into 1/4-inch pieces. Mince the garlic. Remove the stems and seed from jalapeno pepper and mince.
Preheat oven to 350 degrees F.
In a large mixing bowl, combine the rice, onion, garlic, jalapenos, spinach, crab meat, salt, and black pepper until well mixed.
Spread the mixture evenly in a large baking dish. Top with cheese. Bake for 1 hour.
