A can of cream of mushroom soup can be a real dinner saver. It works great in casseroles and can turn into a sauce or gravy in a pinch.
Imitation Crabmeat Au Gratin

ingredients
1 cup chopped onion
1/2 cup chopped bell pepper
1/4 pound margarine
1/4 cup flour
1 can (13 ounce size) evaporated milk
2 egg yolks
1 pound imitation crabmeat
1/2 pound shredded cheddar cheese
1 teaspoon cajun spice seasoning (or more depending on how spicy you like)
directions
Saute onion and bell pepper in margarine. Blend in flour to onion mixture. Stir milk in gradually. Add egg yolks, stirring until mixed well. Add cajun spice and cook five minutes.
Tear up crabmeat until it is bite sized pieces and layer across bottom of a greased casserole (at least 2 quarts), although I tend to use an oval shaped casserole dish. Pour cooked sauce over crabmeat and sprinkle cheese on top. Bake at 375 degrees F for 10-15 minutes.
Serve over rice or fettucine noodles, if preferred.

This is a great recipe. Super easy and awesome. First time I made it - my family said "you are cooking this next week too." LOVE IT. Added some extra spice to it 2nd time and also didn't have evaporated milk so I used whole milk with same delicious results.

This is a great, scrumptious recipe! I spiced up the sauce a bit with some Mrs. Dash, made it with 12oz imitation crabmeat and 12 oz chopped up shrimp. Would have been devine with just the imit. crab. Used less cheese and may 1/2 the sauce next time, just to eliminate some calories. Thanks for this wonderful recipe!!!
