Swiss Crab Casserole

ingredients
3 tablespoons butter
1/2 cup chopped celery
1/2 cup chopped onion
1/4 cup chopped green bell pepper
3 tablespoons flour
3 chicken bouillon cubes
2 1/2 cups boiling water
1 cup instant rice
14 ounces crab meat, drained and flaked
2 1/2 cups shredded Swiss cheese, divided
4 ounces sliced mushrooms, drained
1/4 cup sliced stuffed green olives
1 cup buttered bread crumbs
directions
Saute the celery, onion, and green pepper in butter. Remove from heat and mix in the flour.
Combine the boiling water and chicken bouillon. Add bouillon mixture to skillet and cook for 2-3 minutes or until slightly thickened.
Combine remaining ingredients except 1/2 cup of the cheese and the bread crumbs in crock pot. Cover and cook on high for 3-5 hours.
Pour mixture into casserole dish. Top with bread crumbs and reserved cheese. Place under broiler until cheese is melted.
