When it's time to take your nachos up a notch-o, these beefy deluxe nachos with refried beans, lettuce, and sour cream are the move.

serves/makes:

ready in:
  under 30 minutes

ingredients

1 pound ground beef
1 envelope taco seasoning mix
1/4 cup water
1 can (16 ounce size) refried beans
1 bag (14 ounce size) tortilla chips
1 pound shredded Cheddar cheese
1 1/2 cup shredded lettuce
1 tomato, seeded and diced
3 green onions, sliced
salsa
sour cream

directions

Preheat the oven to 350 degrees F.

Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease. Stir the taco seasoning into the meat and mix well. Slowly stir in the water. Let simmer for 10 minutes.

Heat the refried beans as directed on the package.

Spread the tortilla chips in a 9x13-inch baking dish. Spoon the beef over the chips evenly. Spread with the refried beans and sprinkle with the cheddar cheese.

Place the baking dish in the oven and bake at 350 degrees F for 10 minutes or until the cheese is melted and the chips are hot.

Remove the baking dish from the oven and top the nachos with shredded lettuce, diced tomato, onion, salsa, and sour cream. Optional other ingredients include guacamole, diced jalapenos, or sliced black olives.

Serve the nachos deluxe immediately.

recipe tips

Try using a combination of different cheeses like Monterey Jack, Pepper Jack, or Queso Fresco for added flavor.

Experiment with adding other toppings such as black olives, jalapenos, diced bell peppers, or even cooked and crumbled chorizo for a twist.

To make the nachos spicy, mix some hot sauce or chipotle peppers into the beef mixture for an extra kick.

For a healthier option, try using whole grain or multigrain tortilla chips instead of traditional corn chips.

If you prefer a vegetarian version, substitute the ground beef with seasoned and cooked black beans, plant-based meat crumbles, or roasted vegetables.

To make the nachos more substantial, try adding a layer of cooked rice or quinoa between the beef and beans.

For a different flavor, try using different salsa varieties such as mango salsa, pineapple salsa, or salsa verde instead of traditional tomato-based salsa.

common recipe questions

Can I use ground turkey or chicken instead of ground beef?

Yes, ground turkey or chicken can be used as a leaner alternative to ground beef, though the flavor and texture will be slightly different.

What can be used instead of refried beans?

If you prefer, you can substitute refried beans with black beans, pinto beans, or even a corn and black bean salsa for a different texture and flavor.

How should I store leftover nachos?

Leftover nachos can be stored in an airtight container in the refrigerator for up to 24 hours. To reheat, place them in the oven at 350 degrees F until warmed through.

Can I freeze nachos?

Nachos with fresh toppings may not freeze well, but you can freeze the beef mixture and cheese separately for a quick nacho assembly later.

How can I prevent the nachos from getting soggy?

To prevent soggy nachos, layer the ingredients starting with the chips, then the beef, beans, and cheese. Add fresh toppings, like tomato and lettuce, right before serving.

tools needed

Skillet: For browning the ground beef and mixing in the taco seasoning to create the meaty base for the nachos.

Spoon: Handy for evenly distributing the beef and refried beans over the tortilla chips.

Baking Dish (9x13-inch): Perfect for layering the tortilla chips, beef, refried beans, and cheese before baking in the oven. A deep-dish pizza pan would also work.

Cheese Grater: For shredding the Cheddar cheese to generously sprinkle over the nachos.

Knife: For seeding and dicing the tomato, slicing the green onions, and any other desired toppings like jalapenos or black olives.

what goes with it?

Loaded Fries: Forget plain old fries, serve these loaded fries with cheese, bacon, and all the fixings for a real bar food experience.

Buffalo Wings: Nothing says game day like a plate of spicy buffalo wings. The heat from the wings will contrast nicely with the cheesy goodness of the nachos.

Zesty guacamole: the creamy, cool texture of guacamole is the perfect contrast to the warm, gooey nachos.

Homemade pickled jalapenos: take your nachos to the next level with some homemade pickled jalapenos. The tangy, crunchy jalapenos are the perfect complement to the cheesy, meaty nachos.

beverage pairings

Wine Pairings
Malbec: This robust red wine with its dark fruit flavors and hint of smokiness can hold its own against the bold flavors of these deluxe nachos. Look for one with a velvety texture.

Chardonnay: If you prefer white wine, a buttery Chardonnay could be just the ticket. The rich flavors and subtle oakiness will complement the cheesy goodness of these nachos. Opt for one with notes of pineapple or vanilla for a nice touch.

Zinfandel: Another great option for red wine lovers, a Zinfandel with its jammy fruit flavors and peppery finish can stand up to the spiciness of the taco seasoning and salsa. Look for one with a hint of black pepper for a little kick.

Other Alcohol Pairings
Mexican Lager: Keep it simple with a Mexican Lager to wash down these loaded nachos. The crispness of the beer will refresh your palate between each cheesy, meaty bite. Look for one with a light body and smooth finish.

Margarita: Why not pair these nachos with a classic Margarita? The citrusy notes will complement the tanginess of the salsa and sour cream, while the tequila adds a kick to match the spices in the dish. Don't forget the salted rim for that extra zing.

Bloody Mary: For an unconventional yet exciting choice, try a Bloody Mary with your nachos. The savory cocktail's bold flavors of tomato juice, Worcestershire sauce, and hot sauce will enhance the hearty ingredients in the nachos. Plus, the celery garnish can double as a snack.

Non-Alcoholic Pairings
Iced Horchata: Craving some cool comfort to go with these nachos? Try an iced horchata. The creamy, cinnamon-infused rice milk will balance out the spicy meat and cheesy toppings with its soothing flavors.

Pineapple Juice: If you want a taste of the tropics, pineapple juice is your go-to. The sweet and tangy flavors will cut through the richness of the cheese and beef, leaving a refreshing finish with each sip.
